Ten inch "Sani-Safe" Chef Knife
I call this my speed knife or service knife. When my mother closed the doors on her old restaurant, she brought this out to me as an other piece to my collection. Back in the summer of 2007, I became frustrated with the knives at Leaf, so started carrying this knife with me. Many cooks made fun of me for carrying such a cheap knife, but this was all I had at the time so I became very used to it at work. When I went to culinary school, I packed it in my roll. I used this 75% of the time when I was there. It is a durable knife, so I didn't mind it getting beat up by the random things I would find placed on, near or around it by my fellow classmates. I just got it sharpened, and it know stays home while I beat up the knife that was included in my equipment roll from school.
