It's Monday, about twenty-five hours before I leave to France with nine other classmates and two chef instructors. I've packed for long trips before, but not like this, I have my chef outfits as well as everyday clothes on top of some good heart-challenging books to read. On top of it all, I have to get everything in one check in suitcase, a carry on, and a personal bag. I don't know what I'll be bringing back right now, but I do anticipate packing up and shipping somethings home so I don't have to worry about making the strict weight limit coming back from France.

Amy and I have Skype set up, so feel free to contact me if you have it as well as we have set up a pre-paid phone card and my cell-phone for extreme emergencies. After all things said and done, we're just holding out on missing each other, until I'm finally gone. So, that's the big catch up, I have tons more to do, so keep tuned in to see how it all goes in France.
