(it is not safe)

Ever wonder where I get the titles to each of my entries (since the change to random and untitled)? I look around and see a sentence, a word, an image or a scene where I am at and chose what ever comes to mind. In this case, I am finally in my apartment in Denver and having an amazingly lazy day with my wife Amy.

Since I've been home, I've accomplished next to nothing. I started my paper on my trip to France due Friday, I unpacked, had quiet times, walked to Tenn Street Coffee (and back), went out to eat with Amy, washed two loads of laundry, pretty mundane type stuff. I have to tell you though, it's nice being home and having those simple things back.

Being in France made me more grateful for Amy. Having daily adventures with out her made it harder to enjoy them. Now that I am back, and I can tell her in person about the things I saw, places I visited, feelings I had, and hold her hand while doing so. I have some basic needs you can say, I need my wife near by, I love my routines, and most importantly I enjoy being home.

Right now, I am still sorting through some of the things I have had the pleasure to enjoy while being in France and coming up with how to replace them somewhat and enjoy our Colorado versions of them. For instance: the open air markets, wonderful products from the charcutierie (preserved meat like dry chorizo, porscuitto, and ham), buying an espresso for 1€50, buying a baguette for 1€, etc. those things I'll miss, but more importantly, they are all a new source of inspiration and starting point in my forming convictions about food.

Amy and I are currently praying for clarity about me returning to France to stage (stahj) with chef Jean-Michel at his new hotel. The man is "Da Man" to say the least. Chef Jean-Michel is a "Disciple of Escoffier" a title that isn't just given out to people who complete some sort of course work, but rather some one who has made effort to continue the work in which Jean-August Escoffier had done. Much of this decision is based on if my commitment to the ITA tuition assistance program will allow me to take on a position in France. I wouldn't be monetarily compensated, but rather room and board is paid for. Hopefully this will work out as God needs for us.
