The man turned to the young wide eye Thomas, "what is this attraction you have to what you are not doing?"
"I don't know. I have this dream about a place to work that I will always be happy. I can not imagine being in place, where I don't want to be. I'm looking to be man who is part of something terrifically dynamic. I would love to work in a kitchen that handles the freshest product around. Put yourself in your parents shoes, they were brought up on buying food that day to cook. Refrigeration came at a premium then, and they knew exactly what they were eating. I'd love to be a part of a concept partly regional, partly seasonal, partly fresh, partly cutting edge and partly innovative."
"What makes you think there is something like that? Isn't that what you are a part of now?"
"You're right on all parts, but I'm stuck. I have to embrace the part of my job I never liked, but I did because I know it would pay off. I started because I wanted to be a bartender. I stayed because there was potential to grow. I left because I needed to grow more. I'm here, because I need to pay bills. So what about it, $8,000 for a fifteen week course?"
"What are you thinking about, can't you just put your time in and get where you want in due time?"
"I could, but I don't think I can be happy still. I want to get to a point that I can have a great time, enjoy my job and be part of something of my dreams. Besides, do you think I have what it takes to get to that point? You've eaten my creations, and you would like me to get more out of what I have the talent for, than what I have the knowledge for."
"Thomas, do you think you are going to convince me to spend $8,000 on a dream of yours? What if you get done and you are still sitting there being unhappy? Are you going to leave your situation to go somewhere else and be less happy again? I'm not going to be a part of your disgruntlement and uneasiness about your place in life."
"I don't think you understand, all my life you have asked me to live a practical and sensible life. I have. But a dream, which stirs others, it's something you have to embrace and chase after quickly."
