Peanut Dressing

Tools
Measuring spoons
Rubber spatula
liquid measuring cup
Food processor or blender

Ingredients
3 tablespoons white vinegar or rice wine vinegar
1/2 cup white grape juice concentrate or apple juice concentrate
3 tablespoons peanut butter
2 inches fresh ginger root, grated
1/2 teaspoon cayenne pepper
1/2 cup roasted sesame oil

Steps
  1. Place all of the ingredients except the oil in the blender or processor, mix until homogeneous.
  2. While the blender or processor is still running, drizzle in oil, again until homogeneous.
  3. Remove from blender or processor and server over your favorite mix of greens.

Notes

  • Add some chopped peanuts to the dressing when you are ready to serve to give the dressing some more body.
  • I would use this dressing on heartier greens, basically, avoid serving on iceberg lettuce.
  • This dressing is great for topping a grilled chicken or salmon salad.
