Ingredients
3 tablespoons white vinegar or rice wine vinegar
1/2 cup white grape juice concentrate or apple juice concentrate
3 tablespoons peanut butter
2 inches fresh ginger root, grated
1/2 teaspoon cayenne pepper
1/2 cup roasted sesame oil
Steps
- Place all of the ingredients except the oil in the blender or processor, mix until homogeneous.
- While the blender or processor is still running, drizzle in oil, again until homogeneous.
- Remove from blender or processor and server over your favorite mix of greens.
Notes
- Add some chopped peanuts to the dressing when you are ready to serve to give the dressing some more body.
- I would use this dressing on heartier greens, basically, avoid serving on iceberg lettuce.
- This dressing is great for topping a grilled chicken or salmon salad.
