(trying to get on terms)


This is Skate Wing. This is one of the more impressive seafood products you'll find yourself handling. The wing pictured is actually one third of one wing on a skate. So put six of these end to end and you'll have the size of the actual skate it came from. We'll run this as a special and then we'll move on to some other seafood that falls withing the guidelines of sustainability. Skate is considered bycatch, but it is not on the "forbidden" fish list like Chilean seabass that is way over fished. Anyway, from this point you should cut in between each of the muscles as well as let them sit in light acidulated water for a few hours to get rid of the ammonia scent it tends to give off.
