What a productive week with the blogs, I must say. It dawned on me the other day that I vent about Upstairs/Downstairs with their proper names, and if a guest were to search our restaurant and see my blog, it may not help in getting them in the door, so I've taken the liberty to change the names to Upstairs/Downstairs in order to protect the name of the place. At the same time, I removed Chef's and GM's names and changed them to Chef and GM. Again, I need to protect them. If you're tuning here because I've updated, I'll apologize now for the confusion.
